Bored to go outside to get a chicken fried rice from a
restaurant. What if you can make the yummiest restaurant-style chicken fried
rice by yourself at your very own kitchen?
Let's see what you need!
INGREDIENTS
- 2 cups
of raw rice cooked (so that it will be around 5-6 cups of cooked rice)
- 250g
of boneless chicken (preferably chicken breast) cut into small strips
- 3-4
eggs
- Finely
sliced garlic
- 1 cup
of shredded cabbage (cut it long and thin)
- 1 cup
of julienned carrot (cut it bit long and thin) (julienned is a type of cut
which is used for vegetables in culinary art)
- 1 cup
of julienned capsicum or green bell pepper
- 3-4
tablespoons of spring onions cut into small pieces (take the green parts)
- 3
teaspoons of dark soy sauce (use 4-5 teaspoons if it is a light soy sauce
you have)
- 1
teaspoon of white vinegar
- 4
tablespoons of oil
- 2
tablespoons of butter or margarine
- Black
pepper powder
- Salt
to taste
DIRECTIONS
- Beat
the eggs by adding salt and black pepper as you prefer and then take a pan
and add 1 tablespoon of oil with 2 tablespoons of butter/ margarine. Heat
it. Later, add the beaten eggs and scramble it. Then, remove it to a
separate plate.
- Remember
to clean the pan after removing the eggs with a kitchen towel!
- Heat 3
tablespoons of oil in the same pan and add the sliced garlic, stir fry it
on high heat. Allow it to turn golden brown.
- Add
the chicken strips and then add some salt and black pepper powder for it
to taste. Mix well. Stir fry on high heat for about 1 minute. Once it
turns in to a beautiful white color add 1 teaspoon of dark soy sauce (2
teaspoons if it is light soy sauce). Let it turn golden brown on medium
heat. (This allows the chicken strips to cook)
- Add
the carrot and the capsicum/ green bell pepper and stir fry it for about 2
minutes on high heat. Then, add the cabbage and mix well while stir-frying
for about another 1 minute.
- Add
the cooked rice and mix it well with all the vegetables and the chicken
strips. Season it with some salt and black pepper powder as per your
preference. Give it a good mix. Then, add the 1 teaspoon of white vinegar
and also add the remaining 2 teaspoons of dark soy sauce (2 or 3 teaspoons
if it is light soy sauce). Let it fry on medium heat for about 3 minutes.
(Toss it if you want)
- Later,
add the scrambled eggs and give it a good mix. Keep it on the heat for
about 2 more minutes. And here we are!
- Serve
it in a rice bowl and sprinkle the rice with the spring onions.
